Noodles Preparation

    Cook the Noodles

    Bring a large pot of salted water to a boil. Add the fresh egg noodles and cook according to package instructions, usually about 3-4 minutes, until al dente. Drain and set aside.

    Prepare the Seafood

    In a large skillet or wok, heat a tablespoon of sesame oil over medium-high heat. Add the shrimp, calamari, and scallops. Stir-fry for about 2-3 minutes until the shrimp is pink and the scallops are opaque. Remove from the heat and set aside.

    Make the Sauce

    In a small bowl, combine the dark soy sauce, oyster sauce, minced garlic, minced ginger, red chili flakes, sugar, and ground black pepper. Mix well to create a sauce mixture.

    Combine Seafood and Sauce

    In the same skillet used for the seafood, add the sauce mixture. Stir well and cook for another minute to heat through. Return the cooked seafood to the skillet and toss to coat in the sauce.

Assembly

    Serve the Noodles

    Divide the cooked noodles into bowls. Top generously with the seafood and sauce mixture. Garnish with chopped green onions and cilantro. Serve with lime wedges on the side for squeezing over the dish.
