Preparation of Potato Mixture

    Boil the Potatoes

    Peel and chop the potatoes into quarters. Place them in a pot of salted water and bring to a boil. Cook for about 15-20 minutes until fork-tender.

    Mash the Potatoes

    Drain the potatoes and return them to the pot. Add butter, milk, salt, and black pepper. Mash until smooth and creamy.

    Mix the Ingredients

    Stir in the cornstarch and mix thoroughly until well combined. Allow the mixture to cool down to room temperature.

Breading the Croquettes

    Prepare the Breading Station

    Set up a breading station with three bowls: one with flour, one with a beaten egg, and one with breadcrumbs.

    Shape the Mixture

    Once the potato mixture has cooled, take a portion and shape it into a small oval or round patty.

    Coat the Croquettes

    Dredge the shaped patty in flour, dip it in the beaten egg, and then coat it with breadcrumbs. Repeat for all patties.

Frying

    Heat the Oil

    In a deep frying pan, heat vegetable oil over medium-high heat until shimmering (about 350°F or 175°C).

    Fry the Croquettes

    Carefully add the breaded croquettes to the hot oil in batches. Fry for 3-4 minutes on each side until golden brown.

    Drain and Serve

    Remove the croquettes from the oil and place them on a paper towel to drain excess oil. Serve hot.
