Noodle Preparation

    Make the Noodle Dough

    In a large mixing bowl, combine the all-purpose flour and salt. Gradually add water while mixing until a dough forms. Knead the dough for about 5-7 minutes until smooth. Cover with a damp cloth and let it rest for 30 minutes.

    Roll and Cut the Noodles

    After resting, roll out the dough on a floured surface to your desired thickness (about 1/8 inch). Cut the dough into strips to form your noodles. Dust with flour to prevent sticking.

Soup Base Preparation

    Prepare the Soup Base

    In a large pot, combine the vegetable broth, coconut milk, red curry paste, soy sauce, lime juice, salt, and pepper. Bring to a simmer over medium heat, stirring occasionally until the curry paste is fully dissolved.

    Add Fresh Ingredients

    Once the soup base is simmering, add the fresh cilantro and stir well to incorporate.

Cooking Protein and Vegetables

    Cook the Protein

    In a skillet over medium-high heat, add a bit of oil. Add the sliced beef and cook until browned, about 3-4 minutes. Remove from the skillet and set aside.

    Sauté the Seafood

    In the same skillet, add the shrimp, calamari, and mussels. Cook for about 3-5 minutes until the shrimp turns pink and the mussels open up. Remove from heat.

    Stir-Fry the Vegetables

    In the same skillet, add the mixed vegetables and stir-fry for about 4-5 minutes until tender-crisp.

Combining All Components

    Combine for Serving

    In the simmering soup base, add the cooked beef, seafood, and stir-fried vegetables. Allow everything to cook together for an additional 3-5 minutes.

    Cook the Noodles

    Meanwhile, in a separate pot, boil water and cook the homemade noodles for about 2-3 minutes until they float to the surface. Drain and set aside.

    Serve the Dish

    To serve, place a portion of the cooked noodles in a bowl, ladle the spicy soup with seafood and vegetables over the noodles. Garnish with extra cilantro if desired.
