Prepare Noodles

Cook the Rice Noodles
Bring a pot of water to a boil. Add the rice noodles and cook according to package instructions until tender, usually around 4-6 minutes. Drain and rinse under cold water to stop the cooking process. Set aside.

Sauté the Shrimp and Scallops
In a large skillet over medium heat, add a tablespoon of sesame oil. Once hot, add the shrimp and scallops. Cook for about 3-4 minutes or until they are cooked through and opaque. Remove from heat and set aside.
Sauté Vegetables

Cook the Vegetables
In the same skillet, add another tablespoon of sesame oil if needed. Add the chopped onion and sauté for 2-3 minutes until translucent. Then add the sliced mushrooms, chopped water chestnuts, and peas. Cook for an additional 3-4 minutes until the vegetables are tender. Remove from heat.

Mix Everything Together
In a large bowl, combine the cooked rice noodles, sautéed shrimp and scallops, and the cooked vegetables. Toss gently to combine.
Prepare Dressing

Make the Dressing
In a small bowl, whisk together the soy sauce, sesame oil, rice vinegar, honey, chili flakes, and salt until well combined.
Finish Dish

Dress the Noodles
Pour the dressing over the noodle mixture and toss until everything is evenly coated. Adjust seasoning with additional salt and chili flakes if desired.
