Method

Preparation

  1. 1

    Soak the Mushrooms

In a bowl, soak the dried black mushrooms in warm water for about 30 minutes or until they are soft. Drain and slice them thinly.

  2. 2

    Prepare the Chicken

Pat the chicken breasts dry with paper towels. Season both sides with salt and black pepper.

  3. 3

    Chop Aromatics

Finely chop the garlic cloves, ginger, and onion. Slice the green onions into small pieces, separating the green parts from the white parts.

Cooking

  1. 4

    Sauté Aromatics

In a large skillet or wok, heat the vegetable oil over medium heat. Add the chopped garlic, ginger, and onion. Sauté for about 2-3 minutes until fragrant and the onion is translucent.

  2. 5

    Cook the Chicken

Add the seasoned chicken breasts to the skillet. Cook for about 6-8 minutes on each side until browned and cooked through. Remove from the skillet and set aside.

  3. 6

    Combine Ingredients

In the same skillet, add the sliced black mushrooms and the white parts of the green onions. Stir-fry for 2-3 minutes. Add soy sauce, sugar, and sesame oil. Mix well.

  4. 7

    Return Chicken to Skillet

Place the cooked chicken breasts back into the skillet. Coat them in the sauce and mushrooms, cooking for an additional 3-4 minutes to allow the flavors to meld.

Finishing Touch

  1. 8

    Serve

Transfer the chicken to a serving platter. Garnish with the green parts of the green onions. Serve hot with steamed rice or noodles.
