Soup Preparation

Prepare the Soup Base
In a large pot, combine the chicken broth and water. Add the minced garlic, chopped onion, diced carrots, diced celery, salt, black pepper, dried thyme, and bay leaf. Bring the mixture to a boil over medium-high heat.

Add Chicken
Once boiling, add the diced chicken breast to the pot. Reduce the heat to medium-low and let it simmer for about 20 minutes, or until the chicken is cooked through and tender.

Add Vegetables
Stir in the frozen mixed vegetables and allow the soup to simmer for an additional 5 minutes.
Noodle Preparation

Make the Noodle Dough
In a mixing bowl, combine the all-purpose flour and salt. Make a well in the center and crack the eggs into the well. Mix the ingredients together until a dough forms.

Knead the Dough
Turn the dough out onto a floured surface and knead it for about 5 minutes until it becomes smooth and elastic. Wrap in plastic wrap and let it rest for 30 minutes.

Roll and Cut the Noodles
After resting, divide the dough into smaller portions. Roll each portion out to your desired thickness and cut into strips for noodles.
Final Assembly

Cook the Noodles
In a separate pot of boiling salted water, cook the noodle strips for 3-4 minutes until al dente. Drain and set aside.

Combine and Serve
Add the cooked noodles to the soup pot and stir well. Let it simmer for an additional 2-3 minutes to heat through. Remove the bay leaf before serving.
