Preparing the Pork

Pat the pork tenderloin dry with paper towels. Season it generously on all sides with salt and black pepper.

Sear the Pork
In a large skillet, heat the olive oil over medium-high heat. Once hot, add the pork tenderloin and sear for about 3-4 minutes on each side until golden brown. Remove from the skillet and set aside.
Making the Cherry Sauce

Combine the Ingredients
In the same skillet used for the pork, add the fresh cherries, sugar, balsamic vinegar, minced garlic, and thyme. Stir to combine.

Cook the Sauce
Bring the mixture to a simmer over medium heat. Cook for about 10-12 minutes, stirring occasionally, until the cherries soften and the sauce thickens slightly.

Thicken the Sauce
In a small bowl, mix the cornstarch with water to create a slurry. Pour this slurry into the cherry sauce while stirring continuously. Cook for an additional 2-3 minutes until the sauce thickens.

Finish Cooking the Pork
Return the seared pork tenderloin to the skillet, spooning the cherry sauce over the top. Cover and reduce heat to low. Let it cook for an additional 10-15 minutes, or until the pork reaches an internal temperature of 145°F.

Remove the pork from the skillet and let it rest for 5 minutes before slicing. Serve the sliced pork with the cherry sauce drizzled over the top.
