    Prep the Chicken

    Cut the boneless chicken breast into bite-sized pieces and season lightly with salt and pepper.

    Chop the Vegetables

    Dice the bell pepper and onion into small pieces, mince the garlic cloves, and peel and finely grate the fresh ginger.

    Prepare the Cashews

    If desired, toast the raw cashews in a dry skillet over medium heat for 3-5 minutes until golden brown, stirring frequently.

    Cook the Chicken

    In a large skillet or wok, heat 2 tablespoons of vegetable oil over medium-high heat. Add the chicken pieces and stir-fry for about 5-7 minutes, or until cooked through and no longer pink. Remove the chicken from the skillet and set aside.

    In the same skillet, add the diced onion, bell pepper, minced garlic, and grated ginger. Sauté for 3-4 minutes until the vegetables are slightly softened.

    In a small bowl, whisk together soy sauce, honey, rice vinegar, sesame oil, cornstarch, and water until smooth.

    Return the cooked chicken to the skillet with the sautéed vegetables. Pour the sauce over the mixture and stir well to coat everything. Cook for an additional 2-3 minutes until the sauce thickens.
