Beef Soup Noodles Recipe

Noodle Preparation

    Make the Dough

    In a large mixing bowl, combine all-purpose flour and salt. Make a well in the center and add the eggs and water. Mix until a dough forms.

    Knead the Dough

    Transfer the dough to a floured surface and knead for about 10 minutes until smooth and elastic. Wrap in plastic wrap and let it rest for 30 minutes.

    Roll Out and Cut Noodles

    After resting, roll out the dough to about 1/8 inch thickness. Cut into your desired noodle shape, such as strips or squares.

Soup Preparation

    Prepare the Broth

    In a large pot, heat sesame oil over medium heat. Add minced garlic and grated ginger, sautéing until fragrant, about 1 minute.

    Add Vegetables

    Add the sliced carrots, bell pepper, and broccoli florets to the pot. Sauté for about 5 minutes until slightly softened.

    Combine the Broth

    Pour in the beef broth, soy sauce, salt, and black pepper. Bring to a boil, then reduce heat and let simmer for 15 minutes.

    Cook the Beef

    Add the thinly sliced beef to the pot and cook for an additional 5 minutes, or until the beef is cooked through.

    Cook the Noodles

    In a separate pot, bring water to a boil. Cook the fresh noodles for 2-3 minutes until al dente. Drain and set aside.

    Serve

    In serving bowls, place a portion of noodles and ladle the hot beef and vegetable soup over them. Garnish with chopped green onions before serving.
