Preparation of Ingredients

    Prepare the Beef

    Thinly slice the beef ribeye or sirloin against the grain into bite-sized pieces.

    Slice the Vegetables

    Julienne the carrot, slice the zucchini into half-moons, and slice the mushrooms.

    Prepare the Aromatics

    Minced the garlic and ginger; chop the green onions.

    Soak the Noodles

    Soak the sweet potato noodles in warm water for about 30 minutes until softened, then drain and set aside.

Cooking the Stew

    Sauté Aromatics

    In a large pot, heat the sesame oil over medium heat. Add minced garlic and ginger, and sauté until fragrant, about 1-2 minutes.

    Cook the Beef

    Add the thinly sliced beef to the pot and cook until browned, stirring occasionally, about 5 minutes.

    Add Vegetables

    Add the sliced mushrooms, julienned carrot, and zucchini to the pot. Stir well and cook for another 3-4 minutes.

    Prepare the Broth

    Pour in the beef broth (or water) and add soy sauce, gochujang, sugar, salt, and pepper. Stir to combine and bring to a boil.

    Simmer

    Once boiling, reduce the heat to low and let it simmer for about 15-20 minutes until the vegetables are tender.

    Add Noodles

    Add the soaked sweet potato noodles and simmer for an additional 5-7 minutes until the noodles are cooked through.

Serving

    Garnish and Serve

    Ladle the stew into bowls and garnish with chopped green onions. Serve hot with steamed rice or on its own.
