Preparation
- 1
Prepare the Chicken
Rinse the chicken breasts under cold water and pat them dry with paper towels. Season both sides of the chicken with salt, black pepper, paprika, and dried thyme.
- 2
Toast the Almonds
In a dry skillet over medium heat, add the sliced almonds. Toast them for about 3-5 minutes, stirring frequently, until they are golden brown and fragrant. Remove from heat and set aside.
Cooking
- 3
Sauté the Chicken
In a large skillet, heat the olive oil over medium-high heat. Add the seasoned chicken breasts and cook for about 5-7 minutes on each side, or until they are golden brown and cooked through (internal temperature should reach 165°F/75°C). Remove the chicken from the skillet and set aside.
- 4
Prepare the Sauce
In the same skillet, add the minced garlic and sauté for about 1 minute until fragrant. Pour in the chicken broth and bring to a simmer, scraping up any browned bits from the bottom of the skillet.
- 5
Combine Chicken and Almonds
Return the chicken to the skillet, spooning some of the sauce over the top. Add the toasted almonds and let everything simmer together for another 2-3 minutes.

Garnish and Serve
Sprinkle the chopped fresh parsley over the chicken and serve with lemon wedges on the side. Enjoy your Almond Chicken!
