Preparation

    Cook the Pasta

    In a large pot, bring salted water to a boil. Add pasta and cook until al dente according to package instructions. Drain and set aside.

    Make the Meat Sauce

    In a large skillet, heat olive oil over medium heat. Sauté onion and garlic until fragrant. Add ground beef, cooking until browned. Stir in tomato paste, crushed tomatoes, red wine, cinnamon, salt, and pepper. Simmer for 20 minutes.

    Prepare the Bechamel Sauce

    In a saucepan, melt butter over medium heat. Whisk in flour and cook for 1-2 minutes. Gradually add milk, whisking continuously until thickened. Stir in nutmeg, salt, and beaten eggs until combined.

Assembly and Baking

    Layer the Pastichio

    In a greased baking dish, layer half of the pasta, followed by the meat sauce, then the remaining pasta. Pour the Bechamel sauce over the top and sprinkle with grated cheese.

    Bake

    Preheat the oven to 180°C (350°F). Bake for 45 minutes, or until the top is golden brown. Allow to cool for 10 minutes before serving.
