    Prepare the Mussels

    Rinse the mussels under cold water to remove any sand or debris. Discard any mussels that are open and do not close when tapped.

    Sauté the Aromatics

    In a large skillet, heat the olive oil over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant.

    Add Tomatoes

    Add the diced tomatoes to the skillet and cook for about 5 minutes, stirring occasionally until they begin to soften.

    Add Mussels

    Add the cleaned mussels to the skillet. Cover the skillet and cook for about 5-7 minutes or until the mussels have opened.

    Finish with Herbs

    Once the mussels are opened, remove the skillet from heat. Stir in the fresh parsley and basil, and season with salt and black pepper to taste.

    Serve

    Serve the Mithia hot in a bowl, garnished with additional herbs if desired.
