Preparation of Vegetables

    Prepare the Eggplants

    Slice the eggplants and sprinkle with salt. Let sit for 30 minutes to draw out moisture, then rinse and pat dry.

    Prepare the Zucchini

    Slice the zucchini into thin rounds.

    Prepare the Potatoes

    Peel and slice the potatoes into thin rounds.

Making the Meat Sauce

    Cook the Meat

    In a large skillet, heat olive oil over medium heat. Add chopped onion and minced garlic, sauté until soft. Add ground beef or lamb, cook until browned.

    Add Tomato and Wine

    Stir in tomato paste, red wine, cinnamon, salt, and pepper. Let simmer for 20 minutes.

Making the Béchamel Sauce

    Melt Butter

    In a saucepan, melt butter over medium heat.

    Make the Roux

    Whisk in flour and cook for 2 minutes. Gradually add milk while whisking to avoid lumps. Cook until thickened.

    Add Nutmeg and Eggs

    Remove from heat, stir in nutmeg. Beat eggs and mix in until fully combined.

Assembling the Moussaka

    Layer the Ingredients

    In a baking dish, layer potatoes, followed by eggplants, zucchini, and meat sauce. Repeat the layers and top with béchamel sauce.

    Add Cheese

    Sprinkle grated Parmesan cheese over the top.

    Preheat Oven

    Preheat your oven to 180°C (350°F).

    Bake

    Bake for 45 minutes or until the top is golden brown. Let rest for 15 minutes before serving.
