Prepare the Marinade
In a small bowl, mix together olive oil, minced garlic, chopped rosemary, chopped thyme, salt, black pepper, and lemon juice. This will be the marinade for the lamb.
Marinate the Lamb
Rub the marinade all over the lamb shoulder, ensuring it is well coated. Cover and let it marinate in the refrigerator for at least 2 hours, preferably overnight.
Preheat the Oven
Preheat your oven to 325°F (165°C).
Prepare for Roasting
Place the marinated lamb in a roasting pan. Pour the vegetable broth around the lamb to keep it moist during roasting.
Roast the Lamb
Cover the roasting pan with aluminum foil and place it in the preheated oven. Roast for about 2.5 to 3 hours, or until the lamb is tender and easily pulls apart with a fork.
Rest and Serve
Once done, remove the lamb from the oven and let it rest for 15 minutes before slicing. Serve with the pan juices drizzled on top.
