Prepare the Ice Cream Base
In a medium saucepan, combine the heavy cream, whole milk, and sugar. Heat over medium heat until the sugar dissolves, stirring occasionally.

Cook the Mixture
Continue to cook the mixture over medium heat, stirring constantly, until it thickens slightly and coats the back of a spoon. Remove from heat and stir in vanilla extract.

Chill the Base
Let the mixture cool to room temperature, then refrigerate for at least 4 hours or overnight.

Preheat the Oven
Preheat your oven to 350°F (175°C).

Prepare the Baklava Layers
Melt the butter in a small saucepan. Lay out the phyllo dough and brush the top layer with melted butter. Layer 8 sheets of phyllo, brushing each with butter.

Layer and Cut
Continue layering phyllo and nut mixture until all are used, finishing with 8 layers of phyllo on top. Cut into diamond shapes with a sharp knife.

Bake the Baklava
Bake in the preheated oven for about 45 minutes or until golden brown.

Add Syrup to Baklava
Once the baklava is done baking, pour the syrup evenly over it. Allow to cool completely.

Mix Baklava with Ice Cream
Once the ice cream base is chilled, churn it according to your ice cream maker's instructions. Chop the cooled baklava into small pieces and fold it into the churned ice cream. Freeze for at least 2 hours before serving.
