Activate Yeast
In a small bowl, combine warm water, sugar, and yeast. Let it sit for about 5-10 minutes until frothy.

In a large bowl, mix together the flour and salt. Make a well in the center and add the activated yeast mixture and olive oil.

Knead Dough
Stir until a dough forms, then knead on a floured surface for about 8-10 minutes until smooth and elastic.

Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour, or until doubled in size.

Punch down the risen dough and divide it into 8 equal pieces. Roll each piece into a ball and then flatten into circles about 6 inches in diameter.
