    Prepare the Marinade

    In a bowl, mix the olive oil, lemon juice, minced garlic, oregano, salt, and black pepper. This will be the marinade for the pork.

    Marinate the Pork

    Cut the pork loin into 1-inch cubes and add it to the marinade. Toss to coat well and let it marinate in the refrigerator for at least 1 hour, or overnight for best flavor.

    Make the Tzatziki

    In a separate bowl, combine the Greek yogurt, grated cucumber, chopped dill, and minced garlic. Mix well and season with salt to taste. Refrigerate until ready to serve.

    Cook the Rice

    In a pot, bring 2 cups of water to a boil. Stir in the rice, cover, and reduce the heat to low. Cook for about 18-20 minutes or until the rice is tender and water is absorbed. Fluff with a fork.

    Preheat the grill to medium-high heat. Thread the marinated pork onto skewers. Grill for about 10-12 minutes, turning occasionally, until the pork is cooked through and has nice grill marks.

    In a bowl, combine mixed salad greens, cherry tomatoes, and diced cucumber. Toss with olive oil, lemon juice, salt, and pepper to taste.

    Serve the grilled pork souvlaki on a platter alongside the tzatziki, cooked rice, salad, and warm Greek pita.
