Method
Marinating and Grilling Lamb

Marinate the Lamb
In a bowl, combine the cubed lamb, garlic, ground cumin, ground coriander, paprika, olive oil, salt, and black pepper. Mix well and let it marinate for at least 1 hour or overnight in the refrigerator.

Prepare Grill
Preheat the grill to medium-high heat.

Skewering
Thread the marinated lamb, onion wedges, and tomato wedges onto skewers.

Grilling
Place the skewers on the grill and cook for about 10-15 minutes, turning occasionally, until the lamb is cooked to your desired doneness.

Rinse Rice
Rinse the basmati rice under cold water until the water runs clear.

In a pot, combine the rinsed rice, water, and salt. Bring to a boil, then reduce heat, cover, and simmer for about 15 minutes or until the rice is fluffy.
Preparing Salad

Mix Salad Ingredients
In a bowl, combine diced cucumber, diced tomato, chopped parsley, lemon juice, olive oil, and salt. Toss to combine.
