Preparation and Cooking

    Marinate the Lamb

    In a large bowl, combine olive oil, minced garlic, dried oregano, ground cumin, salt, and black pepper. Add the lamb and coat it well. Cover and marinate in the refrigerator for at least 2 hours or overnight.

    Prepare the Tzatziki Sauce

    In a separate bowl, combine Greek yogurt, grated cucumber, lemon juice, and chopped dill. Mix well and refrigerate until ready to serve.

    Cook the Rice

    Rinse the rice under cold water. In a saucepan, bring vegetable or chicken broth to a boil. Add the rice, cover, and simmer on low heat for about 15 minutes or until the rice is cooked and liquid is absorbed. Fluff with a fork and set aside.

    Grill the Lamb

    Preheat a grill or grill pan over medium-high heat. Remove the lamb from the marinade and grill for about 15-20 minutes, turning occasionally, until the meat is well browned and cooked to your desired doneness. Let it rest for 5 minutes before slicing thinly.

    Assemble the Platter

    On a serving platter, arrange the grilled lamb slices, rice, and a small portion of mixed salad greens topped with cherry tomatoes and cucumber slices. Serve with warmed Greek pita bread and a side of tzatziki sauce.
