Directions to Prepare Lamb Gyro Sandwich

    Marinate the Lamb

    In a large bowl, combine olive oil, minced garlic, dried oregano, ground cumin, salt, and black pepper. Add the lamb shoulder and coat well. Marinate for at least 1 hour, preferably overnight in the refrigerator.

    Prepare the Tzatziki Sauce

    In a medium bowl, mix together the grated cucumber, plain yogurt, lemon juice, and chopped dill. Season with salt to taste. Refrigerate until ready to serve.

    Grill the Lamb

    Preheat the grill to medium-high heat. Remove the lamb from the marinade and place it on the grill. Cook for about 4-5 minutes per side, or until the lamb reaches an internal temperature of 60°C (140°F) for medium-rare. Remove from the grill and let it rest for 10 minutes.

    Slice the Lamb

    Once rested, slice the lamb thinly against the grain.

    Assemble the Gyros

    Warm the pita bread on the grill for about 1 minute on each side. To assemble, place some shredded lettuce, diced tomato, and sliced red onion on each pita. Add the sliced lamb on top and drizzle with tzatziki sauce.

    Serve the lamb gyros immediately with extra tzatziki on the side.
