Soak Chickpeas
Soak the dried chickpeas in water overnight or for at least 8 hours.

Make Falafel Mixture
Drain and rinse the soaked chickpeas. In a food processor, combine chickpeas, parsley, onion, garlic, cumin, coriander, baking powder, salt, and pepper. Pulse until a coarse mixture forms. Add water gradually until the mixture holds together but is not too wet.

Shape and Fry Falafel
Form the mixture into small balls or patties. Heat oil in a deep skillet over medium heat. Fry the falafel in batches for about 4-5 minutes or until golden brown. Drain on paper towels.

Assemble the Sandwich
Warm the Lebanese pita bread. Place 2-3 falafel balls in each pita, add sliced tomatoes, drizzle with tahini sauce, and garnish with extra parsley if desired.
