    Marinate the Chicken

    In a bowl, combine olive oil, lemon juice, dried oregano, salt, and black pepper. Add the chicken breasts and coat evenly. Cover and marinate in the refrigerator for at least 1 hour.

    Prepare Tzatziki Sauce

    Grate the cucumber and squeeze out excess water. In another bowl, mix Greek yogurt, grated cucumber, minced garlic, salt, and a drizzle of olive oil. Set aside in the fridge.

    Cook the Chicken

    Preheat a grill or skillet over medium-high heat. Grill the marinated chicken breasts for about 6-7 minutes on each side, or until fully cooked. Remove from heat and let rest for a few minutes before slicing thinly.

    Cook the Rice

    In a pot, bring 400 ml of water to a boil. Add the rice, cover, and reduce to a simmer. Cook for about 15-20 minutes or until the rice is tender and water is absorbed.

    Prepare Salad

    Chop the mixed salad greens, tomato, and remaining cucumber. Toss together in a bowl and drizzle with olive oil and a pinch of salt.

    On a plate, serve the grilled chicken slices with a side of tzatziki, cooked rice, salad, and warm pita bread.
