    Prepare the Lamb

    Preheat your oven to 375°F (190°C). Season the petite rack of lamb with salt and black pepper on all sides.

    Apply the Mustard

    Brush the Dijon mustard evenly over the meaty side of the lamb rack.

    Create the Herb Crust

    In a bowl, combine the chopped pecans, fresh thyme, and a pinch of salt and pepper. Press this mixture firmly onto the mustard-coated side of the lamb.

    Roast the Lamb

    Place the lamb rack in a roasting pan, crust side up. Roast in the preheated oven for about 25-30 minutes for medium-rare, or until the internal temperature reaches 145°F (63°C).

    Rest and Serve

    Remove the lamb from the oven and allow it to rest for 10 minutes before slicing. Serve with your choice of sides.
