    Prepare the Onions

    Slice the yellow onions thinly.

    Sauté the Onions

    In a large pot, melt the butter and olive oil over medium heat. Add the sliced onions and sauté until they are soft and caramelized, about 20-25 minutes.

    Add Beef Stock

    Pour in the beef stock and bring to a simmer. Season with salt, black pepper, and thyme to taste. Let it simmer for an additional 15 minutes.

    Prepare the Crostini

    While the soup is simmering, preheat your oven to 400°F (200°C). Arrange the crostini on a baking sheet, top with provolone cheese, and bake until the cheese is melted and bubbly, about 5-7 minutes.
