Prepare the Brussels Sprouts
Preheat your oven to 200°C (400°F). Trim the ends of the Brussels sprouts and remove any yellow or damaged leaves. Cut them in half lengthwise.

Roast the Brussels Sprouts
Place the halved Brussels sprouts on a baking sheet. Drizzle with olive oil, balsamic vinegar, salt, and black pepper. Toss to coat evenly. Roast in the oven for 20-25 minutes or until they are golden brown and crispy on the outside.

Prepare the Brown Butter
While the Brussels sprouts are roasting, melt the unsalted butter in a saucepan over medium heat. Continue cooking, swirling the pan occasionally, until the butter is golden brown and has a nutty aroma. Be careful not to burn it.

Combine and Serve
Once the Brussels sprouts are done roasting, remove them from the oven and drizzle the brown butter over them. Add the toasted pine nuts and freshly grated Parmesan cheese. Toss gently to combine and serve warm.
