Prepare the Pulled Chicken
If you don't have pulled chicken ready, cook chicken breasts in a pot with water, salt, and seasonings. Boil until fully cooked (about 15-20 minutes). Shred chicken using two forks.

Make the Pico de Gallo
In a bowl, combine diced tomatoes, onions, cilantro, lime juice, and salt. Mix well and set aside.

Prepare the Cabbage
Shred the green cabbage finely and set aside.

Assemble the Taquitos
Take a corn tortilla and fill it with a few tablespoons of pulled chicken, a sprinkle of shredded cabbage, and a spoonful of pico de gallo.

Roll the Taquitos
Roll the tortilla tightly around the filling and secure with a toothpick if necessary. Repeat this until all tortillas are filled.

Fry the Taquitos
Heat oil in a frying pan over medium heat. Once hot, carefully place the taquitos seam-side down in the pan. Fry until golden brown and crispy, about 3-4 minutes on each side.

Remove the taquitos from the pan and let them drain on paper towels to absorb excess oil.
