Prepare the Chicken Fajitas

Slice the chicken into thin strips. In a large skillet, heat a tablespoon of oil over medium-high heat. Add the chicken and cook for about 5-7 minutes until browned. Add the fajita seasoning, sliced bell peppers, and onion, and cook for an additional 5 minutes until the vegetables are tender.

Cook the Mexican Rice

In a saucepan, combine 2 cups of rice with 4 cups of water, a pinch of salt, and a tablespoon of oil. Bring to a boil, then reduce heat to low, cover, and simmer for 20 minutes or until the rice is tender. Fluff with a fork before serving.

In a pot, heat the refried beans over medium heat, stirring occasionally until warmed through. You can add a splash of water for a smoother consistency if desired.
