Prepare the Red Rice

    In a medium-sized pot, bring 2 cups of water to a boil. Add 1 cup of red rice, reduce the heat to low, cover, and simmer for about 20 minutes or until the rice is tender and the water is absorbed. Remove from heat and let it sit for 5 minutes before fluffing with a fork.

Heat the Refried Beans

    Warm the Beans

    In a small saucepan, heat 1 cup of refried beans over medium heat until warmed through, stirring occasionally to prevent sticking. This should take about 5 minutes.

Prepare the Other Ingredients

    Prepare Vegetables and Cheese

    Finely shred 1 cup of red cabbage and chop 0.5 cups of cilantro. Set aside. Grate or crumble 1 cup of mixed cheese and 0.5 cups of Oaxaca cheese.

Assemble the Burrito

    Take an Azteca tortilla and place 1/4 cup of red rice in the center. Add 1/4 cup of warmed refried beans, followed by 1/4 cup mixed cheese, 1/4 cup Oaxaca cheese, 1/4 cup shredded red cabbage, and a tablespoon of pickled jalapeños. Drizzle with 2 tablespoons of molcajete red sauce and top with cilantro.

    Fold in the sides of the tortilla and then roll it up from the bottom to the top, ensuring all fillings are secured inside.
