    Prepare the Ingredients

    Begin by washing the chicken thoroughly and cutting it into pieces if using a whole chicken. Dice the onion, mince the garlic, and chop the cilantro. Set aside.

    Cook the Chicken

    In a large pot, add the chicken pieces and pour in the chicken broth (or water). Bring to a boil over medium-high heat and then reduce to a simmer. Cook for about 20-25 minutes until the chicken is fully cooked.

    Add Aromatics

    Once the chicken is cooked, remove it from the pot and set it aside to cool. In the remaining broth, add the diced onion, minced garlic, salt, black pepper, and cumin. Simmer for about 5 minutes until the onion is translucent.

    Cook the Rice

    Add the rice to the pot and stir well. Return the chicken pieces back to the pot. Cover and let it simmer for an additional 15-20 minutes, or until the rice is tender and has absorbed the flavors.

    Once the rice is cooked, squeeze the juice of the limes into the pot and stir in the chopped cilantro. Adjust seasoning with more salt and pepper if needed. Let it sit for a few minutes before serving.
