Cooking the Rice

    Prepare Red Rice

    In a medium saucepan, combine the long-grain white rice, tomato sauce, water, and salt. Bring to a boil over high heat.

    Once boiling, reduce heat to low, cover, and simmer for about 20 minutes, or until rice is cooked and liquid is absorbed. Fluff with a fork and set aside.

Preparing Refried Beans

    Cook Refried Beans

    In a small saucepan, heat olive oil over medium heat. Add the canned refried beans, ground cumin, and garlic powder.

    Cook for about 5-7 minutes, stirring occasionally until heated through. Set aside.

Cooking the Shrimp

    Prepare Shrimp

    In a large skillet, heat olive oil over medium-high heat. Season the shrimp with paprika, salt, and black pepper.

    Add the shrimp to the skillet and cook for 2-3 minutes on each side, or until they are pink and opaque. Remove from heat.

Assembling the Burrito

    Build the Burrito

    Warm the flour tortillas in a dry skillet or microwave until pliable.

    Place a portion of the cooked red rice, refried beans, and shrimp in the center of each tortilla.

    Top with mixed cheese, diced tomato, shredded red cabbage, crumbled bacon, azteca sauce, black corn salsa, and crema.

    Fold the sides of the tortilla over the filling, then roll from the bottom up to form a burrito. Repeat with remaining tortillas.
