Prepare the Cheese Filling
In a mixing bowl, combine the shredded cheddar cheese, Monterey Jack cheese, and softened cream cheese. Mix well until all cheeses are evenly distributed and creamy.

Assemble the Quesadilla
Lay a tortilla flat on a clean surface. Spread a generous amount of the cheese filling mixture evenly over half of the tortilla.

Add Azteca Sauce
Drizzle a spoonful of Azteca sauce over the cheese filling, ensuring even distribution.

Fold the Tortilla
Carefully fold the tortilla in half to cover the cheese filling and sauce.

Cook the Quesadilla
Heat a skillet over medium heat and add a tablespoon of olive oil. Once hot, place the folded quesadilla in the skillet. Cook for about 3-4 minutes on each side, or until the tortilla is golden brown and the cheese has melted.

Repeat the process for the remaining tortillas and cheese filling.

Once cooked, remove the quesadillas from the skillet and cut them into triangles. Serve warm with a side of Crema Mexicana for dipping.
