Method

Sopapilla Dough

    Prepare the Dough

    In a large bowl, combine flour, baking powder, salt, and sugar. Mix well.

    Add Liquid Ingredients

    Add the vegetable oil and warm water to the dry ingredients. Knead the dough until it is smooth and elastic, about 5 minutes.

    Rest the Dough

    Cover the dough with a damp cloth and let it rest for about 30 minutes.

    Roll Out the Dough

    Roll out the dough on a floured surface to about 1/4 inch thickness. Cut into squares or triangles.

    Fry the Sopapillas

    In a deep pan, heat 4 cups of vegetable oil over medium-high heat. Fry the dough pieces until golden brown on both sides, about 2-3 minutes per side. Drain on paper towels.

Horchata Ice Cream

    Prepare the Horchata

    Rinse the rice and soak it in 2 cups of water with the cinnamon sticks for at least 4 hours or overnight.

    Blend the Mixture

    After soaking, blend the rice and cinnamon mixture with an additional 2 cups of water until smooth.

    Strain the Mixture

    Strain the blended mixture through a fine mesh sieve or cheesecloth into a bowl, discarding solids.

    Mix the Ice Cream Base

    Combine the strained horchata with milk, heavy cream, sugar, vanilla extract, and salt. Mix well.

    Churn the Ice Cream

    Pour the mixture into an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft-serve consistency. Transfer to a container and freeze until firm.

Brandy Butter

    Cream the Butter

    In a mixing bowl, beat the softened butter until creamy and smooth.

    Add Sugar and Brandy

    Gradually add the powdered sugar and continue to beat until fully incorporated. Stir in the brandy until well mixed.

Chocolate and Caramel Sauce

    Make Chocolate Sauce

    In a saucepan, heat the heavy cream until it just begins to simmer. Remove from heat and add the chocolate chips, stirring until melted and smooth.

    Make Caramel Sauce

    In another saucepan, combine brown sugar, butter, and a pinch of salt. Cook over medium heat, stirring constantly until the mixture thickens and caramelizes, about 5-7 minutes. Remove from heat and stir in the vanilla extract.
