Preparation

Prepare the Filling
If using shredded chicken, cook and shred the chicken breast. If using cheese, shred or crumble the cheese.

Prepare the Sauce
Choose red or green sauce and heat it in a saucepan over medium heat until warm.

Prep the Vegetables
Wash and chop the lettuce and tomato. Set aside for topping.
Assembling the Enchiladas

Fill the Tortillas
Take a corn tortilla, add a generous amount of shredded chicken or cheese in the center, then roll up the tortilla tightly.

Arrange in Baking Dish
Place the rolled tortillas seam-side down in a greased baking dish. Continue with remaining tortillas.
Baking

Add Sauce
Pour the heated red or green sauce evenly over the enchiladas in the baking dish.

Top with Cotija Cheese
Sprinkle the cotija cheese over the top of the sauce-covered enchiladas.

Bake
Preheat the oven to 350°F (175°C) and bake the enchiladas for 20-25 minutes, until heated through and slightly golden.

Serve the enchiladas hot topped with lettuce, diced tomatoes, and a dollop of sour cream.
