    Prepare the Filling

    In a mixing bowl, gently combine the lump crab meat and mixed cheese. Be careful not to break the crab meat too much.

    Prepare the Tortillas

    Lay out the flour tortillas on a clean surface. Spread the crab and cheese mixture evenly over one half of each tortilla.

    Add Pickled Cabbage

    Top the crab and cheese mixture with a generous amount of red pickled cabbage.

Cooking

    Cook the Quesadilla

    In a large skillet or griddle, heat 1 tablespoon of butter or oil over medium heat. Fold each tortilla in half over the filling and place in the skillet.

    Flip and Cook

    Cook for 3-4 minutes on one side until golden brown, then carefully flip and cook the other side for another 3-4 minutes, until the cheese is melted and the tortilla is crispy.

    Repeat

    Repeat the process for the remaining tortillas, adding more butter or oil as needed.

Serving

    Slice and Serve

    Remove the quesadillas from the skillet and let them cool slightly before slicing into wedges. Serve with guacamole, chipotle-crab remoulade, and crema on the side.
