Cook the Chorizo
In a skillet over medium heat, add the chorizo. Cook for about 8-10 minutes, breaking it apart with a wooden spoon until fully browned and cooked through. Drain excess fat if necessary.

Prepare the Red Rice
In a separate pot, cook the red rice according to package instructions. Typically, you will need to rinse the rice, then add 2 cups of water for every cup of rice. Bring to a boil, then reduce heat, cover, and simmer for about 20 minutes or until water is absorbed.

Heat the Refried Beans
In a small saucepan, heat the refried beans over low heat, stirring occasionally until warm. This should take about 5-7 minutes.

Prepare the Queso Blanco
In a microwave-safe bowl, heat the queso blanco for about 30 seconds to 1 minute until melted and smooth. Stir in between heating to ensure even consistency.

Slice the Jalapeno
Wash the jalapeno, remove the stem, and slice it thinly. You can remove the seeds if you prefer less heat.

Layer the Ingredients
On a serving plate or in a bowl, start with a base of the cooked red rice. Add a generous scoop of refried beans on one side.

Add Chorizo and Toppings
Next, add the cooked chorizo on top of the rice. Drizzle the melted queso blanco over the chorizo. Top with a dollop of crema and a generous portion of pico de gallo.

Finally, garnish with the sliced fresh jalapeno for added flavor and spice. Serve immediately.
