Steak Preparation

    Season the Steak

    Season the ribeye steak on both sides with salt and black pepper.

    Cook the Steak

    In a skillet, heat olive oil over medium-high heat. Add the ribeye steak and cook for about 4-5 minutes on each side or until it reaches medium doneness. Remove from heat and let it rest for 5 minutes before slicing.

Vegetable Preparation

    Prepare Vegetables

    While the steak is resting, prepare the vegetables. Slice the yellow squash, zucchini, and red onion. Trim the asparagus.

    Grill Cherry Tomatoes and Asparagus

    Preheat a grill or grill pan over medium heat. Toss the cherry tomatoes and asparagus with a bit of olive oil, salt, and pepper. Grill for about 3-4 minutes until tender and slightly charred.

    Sauté Squash and Zucchini

    In a skillet, add a little olive oil and sauté the yellow squash and zucchini over medium heat for about 5 minutes until tender.

    Roast Corn

    If using fresh corn, grill or roast it until cooked, then cut the kernels off the cob. If using canned or frozen corn, simply heat it through.

Cilantro Lime Vinaigrette Preparation

    Blend Vinaigrette

    In a blender, combine fresh cilantro, lime juice, olive oil, garlic clove, honey, and salt. Blend until smooth. Adjust seasoning to taste.

Assembly

    Assemble the Salad

    In a large bowl, combine arugula and spinach. Add the roasted corn, grilled cherry tomatoes, asparagus, sautéed yellow squash, and zucchini. Slice the rested ribeye steak and arrange it on top of the salad.

    Drizzle the cilantro lime vinaigrette over the salad and toss gently to combine. Serve immediately.
