Prepare Chicken

Cook the Chicken
In a skillet, heat olive oil over medium heat. Season chicken breasts with chili powder, cumin, garlic powder, salt, and black pepper. Add the chicken to the skillet and cook for about 6-7 minutes on each side, or until fully cooked. Remove from heat and shred the chicken.
Cook Rice and Beans

Prepare Red Rice
In a pot, bring vegetable broth to a boil. Add red rice, reduce heat to low, cover, and simmer for about 20 minutes or until rice is tender and liquid is absorbed. Fluff with a fork.

Heat Refried Beans
In a small saucepan, heat the refried beans over low heat until warmed through, stirring occasionally.
Assemble Chicken Chimi

Combine Ingredients
In a large bowl, combine the shredded chicken, cooked red rice, and warmed refried beans. Mix well.

Fill and Top
In a tortilla, add a generous portion of the chicken mixture and top with shredded cabbage, cheddar jack cheese, crema, and queso flameado.

Roll the tortilla tightly around the filling, folding in the sides as you go to secure the filling.
