Grill the Chicken
Preheat the grill to medium-high heat. Season the chicken breasts with salt and pepper. Grill the chicken for about 6-8 minutes on each side, or until the internal temperature reaches 165°F (75°C). Remove from the grill and let it rest before slicing.

Prepare the Romaine
While the chicken is grilling, wash the romaine lettuce heads thoroughly. Cut them in half lengthwise and brush the cut sides lightly with olive oil, then grill for 2-3 minutes cut side down until slightly charred. Remove from the grill and chop into bite-sized pieces.

Make the Salad
In a large bowl, combine the grilled romaine, sliced grilled chicken, pico de gallo, cotija cheese, and tortilla strips.

Dress the Salad
Drizzle the Caesar dressing over the salad mixture. Toss gently to combine all ingredients evenly, ensuring all the romaine and chicken are coated with the dressing.
