Marinade

Method

Marinade Preparation

  1. 1

    Prepare the Marinade

In a large bowl, whisk together the olive oil, lemon juice, minced garlic, smoked paprika, cumin, salt, and black pepper until well combined.

  2. 2

    Marinate the Haddock

Add the haddock fillets to the marinade and coat them thoroughly. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes, allowing the flavors to penetrate the fish.

Pickled Slaw Preparation

  1. 3

    Prepare the Slaw

In a separate bowl, combine the shredded cabbage, grated carrot, and sliced red onion.

  2. 4

    Make the Pickling Liquid

In a saucepan over medium heat, combine the apple cider vinegar, sugar, salt, and black pepper. Stir until the sugar and salt have dissolved.

  3. 5

    Pickle the Vegetables

Pour the warm pickling liquid over the slaw mixture, tossing to combine. Let it sit for at least 15 minutes at room temperature to allow the flavors to meld.

Cooking the Haddock

  1. 6

    Preheat the Grill

Preheat your outdoor grill to medium-high heat.

  2. 7

    Grill the Haddock

Remove the haddock from the marinade and place it on the grill. Cook for about 4-5 minutes on each side, or until the fish flakes easily with a fork and has nice grill marks.

Serving

  1. 8

    Serve the Dish

Place the grilled haddock on a plate and top it with the pickled slaw. Serve immediately and enjoy!
