Red Rice

Method

Red Rice Preparation

    Cook the Rice

    In a medium saucepan, heat the olive oil over medium heat. Add the diced onion and minced garlic, sauté until the onion is translucent.

    Add the Remaining Ingredients

    Stir in the rice, tomato sauce, water, cumin, salt, and black pepper. Bring to a boil, then reduce heat to low, cover, and simmer for about 20 minutes or until rice is cooked and water is absorbed.

Charro Beans Preparation

    Cook the Bacon

    In a pan, cook the diced bacon over medium heat until crispy. Remove and drain on paper towels.

    Sauté Vegetables

    In the same pan, add diced onion and minced garlic, sauté until soft. Then add diced jalapeño and cook for an additional minute.

    Combine Beans and Season

    Add the canned pinto beans (with liquid) and water to the pan. Stir in the cooked bacon, cilantro, salt, and black pepper. Simmer for 10-15 minutes.

Burrito Assembly

    Prepare Tortillas

    Warm the large flour tortillas in a skillet until pliable.

    Assemble the Burrito

    On each tortilla, layer the red rice, charro beans, diced tomato, shredded red cabbage, mixed cheese, pickled jalapeños, avocado slices, and chopped cilantro.

    Add Salsas

    Drizzle with salsa verde and crema according to taste.

    Wrap It Up

    Fold in the sides of the tortilla and roll tightly from the bottom to the top to enclose the filling.
