Rice

    In a separate saucepan, bring 2 cups of water to a boil. Add 1 cup of white rice, cover, and reduce the heat to low. Simmer for 18 minutes until the rice is cooked and fluffy. Remove from heat and let stand for 5 minutes before fluffing with a fork.

Cabbage

    In a mixing bowl, combine the shredded cabbage, lime juice, and salt. Toss well and let it sit for 5-10 minutes to soften.

Cheddar Jack

    Melt the Cheddar Jack

    In a microwave-safe bowl, add the cheddar jack cheese. Microwave in 30-second intervals until melted and gooey, stirring between intervals.

Queso Flameado

    Prepare the Queso Flameado

    In a skillet, cook the chorizo over medium heat until browned and cooked through. Drain excess fat, then add queso blanco to the skillet. Stir until the cheese is melted and bubbly, about 5 minutes.
