    Season the Chicken

    In a large bowl, season the chicken thighs with salt, black pepper, and cumin. Let it marinate for about 15 minutes.

    Brown the Chicken

    In a large pot or Dutch oven, heat olive oil over medium-high heat. Add the marinated chicken thighs and brown them on both sides for about 5-7 minutes each. Remove from the pot and set aside.

    Sauté Vegetables

    In the same pot, add the chopped onion and minced garlic. Sauté for about 3-4 minutes until the onion becomes translucent. Add the diced tomato and cook for another 2 minutes.

    Cook the Rice

    Add the rice to the pot, stirring well to coat the rice with the oil and vegetables. Pour in the chicken broth and bring to a boil.

    Combine and Simmer

    Once boiling, reduce the heat to low, add the browned chicken back to the pot, and cover. Let it simmer for about 25-30 minutes or until the rice is cooked and has absorbed all the liquid.

    Add Green Peas and Cilantro

    In the last 5 minutes of cooking, add the green peas and chopped cilantro. Stir gently and cover to finish cooking.

Sweet Fried Plantains Preparation

    Prepare Plantains

    Peel the ripe plantains and cut them diagonally into 1-inch thick slices.

    Fry Plantains

    In a large skillet, heat vegetable oil over medium heat. Once hot, add the plantain slices in batches, frying them until they are golden brown on both sides, about 2-3 minutes per side.

    Drain and Serve

    Remove the fried plantains from the skillet and place them on paper towels to drain excess oil. Serve warm alongside the arroz con pollo.
