Braised Pork Belly and Rice
Preparation and Cooking
1. Prepare the Pork Belly
In a pot, combine soy sauce, mirin, sugar, ginger, and 200 ml of water. Bring to a simmer.
2. Braised Cooking
Add the pork belly to the pot. Cover and simmer on low heat for about 1.5 to 2 hours, or until the pork is tender. Turn the pork halfway through.
3. Cook the Rice
While the pork is braising, cook the rice according to your preferred method (rice cooker or stovetop).
4. Slice the Pork
Once the pork belly is tender, remove it from the pot and let it cool slightly. Slice into thin pieces.
5. Assemble the Dish
In a bowl, place a serving of cooked rice. Top with sliced pork belly, drizzle some of the braising sauce, and garnish with chopped green onions, sesame seeds, and pieces of nori.
