Prepare the Beef
Preheat your oven to 300°F (150°C). In a large skillet, heat olive oil over medium-high heat. Season the beef chuck roast with salt, black pepper, and Italian seasoning. Sear the beef on all sides in the skillet until browned, about 4-5 minutes per side.

Slow Roast the Beef
Transfer the seared beef to a roasting pan. Add minced garlic and beef broth to the pan. Cover with aluminum foil and roast in the preheated oven for about 3 hours, or until the beef is tender and easy to shred.

Prepare the Peppers
While the beef is roasting, slice the Italian peppers. You can sauté them in a bit of olive oil for 5-7 minutes until they are soft, if desired.

Assemble the Sandwich
Once the beef is cooked, remove it from the oven and let it rest for 10 minutes. Shred the beef using two forks. Split the submarine rolls and layer with shredded beef, sautéed peppers, and provolone cheese.

Melt the Cheese
Place the assembled sandwiches in the oven for 5-7 minutes, or until the provolone cheese is melted and bubbly.

Remove from the oven, let cool slightly, and serve warm.
