Make the Dough
In a large bowl, combine flour and salt. Make a well in the center and add eggs and olive oil. Mix until the dough forms, then knead for about 10 minutes until smooth. Wrap in plastic and let it rest for 30 minutes.
Prepare the Filling
In a mixing bowl, combine ricotta, Parmesan, egg, spinach, salt, and pepper. Mix until well combined.
Roll Out the Dough
Divide the dough into four portions. Roll each portion out on a floured surface until thin (about 1/16 inch thick).
Fill the Ravioli
Cut the rolled-out dough into squares. Place a teaspoon of filling in the center of each square. Moisten the edges with water, then fold over to form a triangle, pressing to seal. Cut to shape and set aside.
Cook the Ravioli
Bring a large pot of salted water to a boil. Add ravioli and cook for 4-5 minutes or until they float to the top. Remove with a slotted spoon.

Serve the ravioli topped with the sauce and additional Parmesan cheese if desired.
