    Prepare the Beans

    In a pot, bring water to a boil. Add the romano beans and cook until tender, about 15-20 minutes. Drain and set aside.

    Cook the Guanciale

    In a skillet over medium heat, add the guanciale and cook until crispy, about 5-7 minutes. Remove from pan and set aside, leaving the fat in the skillet.

    Sear the Pork Chops

    Rub the pork chops with olive oil, salt, and black pepper. In the skillet with guanciale fat, sear the pork chops for about 4-5 minutes on each side until they are cooked through and have a nice crust.

    Combine Ingredients

    In the same skillet, add the cooked romano beans, garlic, and bomba calabrese. Stir to combine and heat through for about 3-4 minutes.

    Serve

    Plate the pork chops and top with the romano bean mixture. Garnish with crispy guanciale on top.
