Lunch Box Menu – Bagel & Lox Box
Method
Bagel & Lox Box Assembly
Prepare bagel base
Split the plain bagel in half and toast until lightly golden. If toasters are unavailable, warm in a dry skillet over medium heat for 2–3 minutes, cut side down.
Spread cream cheese
Spread 1 tablespoon of softened cream cheese on each bagel half, covering the surface evenly. For a lighter spread, use 1.5 tablespoons total and fold in a pinch of minced dill if available.
Add lox and onions
Layer the 4 oz of sockeye salmon lox evenly over the bottom bagel half. Scatter the thinly sliced red onions over the salmon in a light, even layer.
Season and capers
Sprinkle 1 tablespoon of capers over the onions. If desired, add a light squeeze of lemon from the wedge for brightness and a few extra caper berries if you have them.
Assemble and plate
Top with the second half of the bagel. Slice in half if portioning for packaging. Plate with a lemon wedge on the side for optional brightness.
Chips option
Include a bag of potato chips as the standard side. If upgrading to a small green salad, note the price adjustment and prepare the salad separately.
