Stuffed French Toast Breakfast (Sandpiper-style)

Prepare filling (options)

Whisk together a savory or sweet filling option. For classic breakfast: create a gentle cream cheese or ricotta-based filling, or keep it simple with a drizzle of maple butter. Optional: add sliced fruit, or a handful of finely chopped nuts to the filling.

Make egg mixture

In a shallow dish, whisk eggs, milk, vanilla, cinnamon, and sugar until well combined.

Dip bread

Lightly dip each slice of thick-cut bread into the egg mixture, ensuring both sides are coated but not soggy. If using stuffed filling, spread a line of filling on a slice before sealing with another slice.

Cook toast

Melt butter in a nonstick skillet over medium heat. Cook the stuffed bread slices for 2-3 minutes per side, until golden and crisp and the filling is warmed through.

Assemble and plate

Fill the plate with two stuffed French toast sandwiches. Dust with powdered sugar if desired.

Finish with toppings

Serve with warm maple syrup on the side and optionally a dollop of whipped cream or fresh berries.
