Method

Steak Preparation

  1. 1

    Season the Steak

Generously season both sides of the Prime Cap Steak with kosher salt and freshly ground black pepper. Let it sit at room temperature for about 30 minutes to ensure even cooking.

  2. 2

    Prepare the Garlic and Rosemary

Peel the garlic cloves and lightly crush them. Rinse the fresh rosemary and set aside.

Cooking the Steak

  1. 3

    Heat the Pan

In a large cast-iron skillet, heat the olive oil over medium-high heat until it shimmers. Make sure the skillet is hot before adding the steak.

  2. 4

    Sear the Steak

Add the seasoned Prime Cap Steak to the hot skillet. Sear for about 4-5 minutes until a golden-brown crust forms. Avoid moving it around during this time.

  3. 5

    Flip the Steak

Carefully flip the steak using tongs. Add the crushed garlic cloves and fresh rosemary to the skillet. Sear the second side for another 4-5 minutes.

  4. 6

    Baste with Butter

Once the second side is seared, reduce the heat to medium. Add butter to the skillet and use a spoon to baste the steak with melted butter for an additional 2-3 minutes until it reaches your desired doneness (135°F for medium-rare).

Resting and Serving

  1. 7

    Rest the Steak

Remove the steak from the skillet and transfer it to a cutting board. Tent with aluminum foil and let it rest for about 10 minutes before slicing.

  2. 8

    Prepare Optional Sides

While the steak is resting, prepare the optional sides. For asparagus, toss with olive oil, salt, and pepper, then roast in the oven at 400°F for 10-12 minutes. For baby potatoes, boil until tender, then toss with butter, salt, and fresh herbs if desired.

  3. 9

    Slice and Serve

Slice the steak against the grain and serve with the optional sides. Enjoy your Prime Cap Steak!
